High fructose corn syrup is a sweet syrup made from corn syrup that is made up of glucose and fructose. There are two forms of high fructose corn syrup called HFCS 42 and HFCS 55. HFCS 42 is mainly used in processed foods, cereals, baked goods, and some beverages. HFCS 55 is used primarily in soft drinks. with fructose concentration of about 55% and glucose concentration of about 45%. The glucose to fructose ratio in cane sugar or table sugar is 50:50. Some believe that concentration of fructose in high fructose corn syrup(either low or high) leads to significant health problems associated with high fructose corn syrup such as increased risk of fatty liver, diabetes, obesity, metabolic syndrome etc.
