A group of pigments that naturally occur in some plants, algae, and bacteria. They are responsible for the yellow, orange, and red colors in plant foods, such as carrots, red peppers, pumpkin, beets, and sweet potatoes. Carotenoids are also found in spinach, collards, kale, mustard greens, and other dark green leafy vegetables.
